dc.description.abstractEl objetivo de este trabajo es evaluar la calidad de carne bovina obtenida por sistema de faena por medio de método Kosher y compararla con la carne obtenida con el sistema tradicional con sistema de insensibilización. Se estudiaran indicadores de bienestar animal para ambos métodos. La palabra hebrea Kósher significa 'apto'. Las leyes de Kashrút definen los alimentos que son aptos para el consumo de un judío. El sistema Kosher es un sacrificio religioso del animal, el ganado o ave de donde se haya obtenido aquella carne deberá haberse sacrificado por un rabino siguiendo unas normas de hierro, de su creencia religiosa, establecido la Torá, donde se desprende toda la doctrina judaica. Los mamíferos y las aves kosher son faenados en un procedimiento especial llamado shejitá, en el cual la garganta del animal es rápidamente cortada, en un corte exacto y sin dolor con un cuchillo perfectamente filoso y liso llamado jalaf realizado por un shojet altamente entrenado, Se realiza en plantas frigoríficas habilitadas e inspeccionadas por un sistema controlador nacional provisto por el país exportador y un control sanitario realizado el Servicio Veterinario y de Sanidad Animal del Ministerio de Agricultura de Israel, el sistema y tecnología de sacrificio y faena se supervisa por un rabino con capacitación higiénico sanitaria y criterios religiosos. Consiste en un corte profundo en la garganta, seccionando los grandes vasos hasta la columna vertebral realizado por un cuchillo jalaf, estrictamente afilado y revisado para que no existan melladuras o fallas y se realiza la shejitá, o sacrificio judío, que secciona las arterias carótidas, venas yugulares, tráquea y esófago. Esto produciría una caída de la presión arterial e inconsciencia, el animal se mantiene colgado de las patas traseras para su desangrado. El método tradicional consiste en una insensibilización del animal por medio de insensibilizadores eléctricos ó métodos desechados a través de un golpe en la cabeza con un pistón neumático retraible. Luego se cuelga de las patas traseras y se seccionan las yugulares para desangrar el animal. El estudio comprenderá desde el traslado desde los corrales hacia el cajón de noqueo, registrando los obstáculos del trayecto como exceso o deficiencia de luz, cadenas y/o otros objetos. Evaluando la actitud de operario, el uso de picanas y/o banderas. Se evaluara el método de sujeción de ambas técnicas de sacrificio. Se realizaran mediciones de indicadores de bienestar animal como cantidad de vocalizaciones, numero de deyecciones y micciones de orina, facies de dolor, intento de huida, movimientos exagerados de patas y cabeza. Se tomara una muestra de sangre al momento del desangrado para determinar indicadores fisiológicos de bienestar: Cortisol, Adrenalina, Noradrenalina. Se tomaran muestras de carne en ambas matanza y se determinaran las características organolépticas, color, olor, terneza, textura, capacidad de retención de agua y flavor.
